This is a Fusion for my favorite bachcha company including my son. They love this a lot.
Take Oil in a pan (preferable Iron Tawa). Add Mustard seeds and Turmeric powder.
Add Straight cut Onion and fry till Golden brown on medium flame.
Add Garlic Paste and fry for another minute.
Add Cut tomatoes and fry.
Add all spices (Cumin powder, Coriander powder, Sambhar Masala, Kitchen King Masala)
Add some Red chili powder and Garam Masala powder as per spice needed.
Add Salt to taste. Mix well.
Add half a potato (finely chopped for keeping the dish together).
Cover and cook on low flame for 10 mins. Keep stirring in between.
When the whole mix is overcooked (ensure it is), then add half crushed groundnuts.
Mash it on the Tawa itself for a minute like we do for Pav Bhaji and ensure its mixed well.
Garnish with Cashew and Coriander and serve with….anything.!!..:)
In case the spice content goes more, do not worry, add some grated coconut to reduce the spice hit or add some Butter.
You can make your own Twists by replacing the Sambhar masala with other Masala’s which the kids may love (Pav Bhaji Masala etc).
Twist it further by mixing this ready dish with Regular cooked Pasta. Kids would ask for second helping immediately.
Kids love the Tangy tomato taste and hence I named it Tawa Tomatina..
