Tawa Brinjal – UK’s Kitchen

One of the most simplest dish is my Tawa Brinjal. This is how it goes:

Take 3-4 medium sized brinjals.

Slit them straight in thin slices.

Place an Iron tawa (Pan) on the stove.

Put 2 tablespoon oil and pre-heat it.

Reduce the flame to low and add Cumin seeds  1 teaspoon.

Quickly add 1/2 teaspoon turmeric powder and stir well.

Add the cur slices of brinjal and saute well for 1-2 mins.

Add 1 tablespoon of Sambhar powder and 1/2 teaspoon of red chili powder.

Add salt as per taste and sprinkle some lemon juice drops.

Cover with a lid and put the stove off after a minute and keep it covered.

The Iron Tawa leaves its unique slightly overcooked kind taste on the brinjals.

It makes the brinjals slightly crispy on the outer side and juicy yet cooked from inside.

Serve in a bowl with raw cabbage strips on the side..:)
