Mushcorn Korma – UK’s Kitchen

The reason to call this Mushcorn is because its a combination of

Baby corns and Mushrooms.

First we will make a Gravy Paste:

1/2 bunch coriander, 1 green chili, 25-30 Garlic cloves, thumb long ginger, 2 Tomatoes, 1 cup grated coconut and a pinch of salt.

Add little water to this and grind to make a paste. keep aside.

The Mushcorn Korma from UK’s Kitchen

Take oil in a Wok/Deep Pan/ Pot and heat.

Add straight cut onions and stir till translucent.

Add Turmeric powder and mix well. keep the flame on low.

Add the paste and stir well.

Add 1 cm cubes of the Capsicum (Simla Mirch) and stir well.

Add 2 Tablespoon of red chili powder, a pinch of Bhut Jolokia (which Fashionablefoods markets now) and stir.

Add 2 tablespoon of thick cream. Add 2 tablespoon of Chole Masala/Pav Bhaji Masala. Stir well.

Add the cut mushrooms and Baby corns and the finely chopped potato.

Add salt to taste.

Add 3 cups water and cover the Wok/ Deep pan/ Pot.

Cook on the lowest flame of your cooking range for 45 mins stirring after every 15 mins.

Remove Lid and adjust the thickness of the Gravy as per need.

I prefer more gravy so kept it watery..

Serve Hot with garnishing of Coriander…..
