Charcoal Tawa chicken

Cut chicken in approximately 1 Inch pieces and marinade with a mix of Onions paste, tomatoes, Ginger paste and fine diced Garlic about 15-20 cloves with salt. Keep aside in refrigerator for 8 hours.

In a pan take oil and add mustard seeds.

Once they splutter add the turmeric powder and add the green chili paste. Add remaining onion paste and fry well with some salt. Add Garam masala and fry further for a minute.

Add the entire marinated chicken and cook till done. Ensure that all water dries up and you are left with the cooked paste. Once the chicken starts throwing oil, it means the water has dried up completely.

On an iron pan (tawa) heat some good amount of oil. Add remaining tomato puree and the red chili powder. Mix well and add the prepared chicken. Fry for 1 min and switch the stove off.

Make space at the centre of the tawa and place a small bowl. Add a burning charcoal in it and put some ghee, butter on it. Cover the tawa immediately with a lid and ensure that the smoke stays in.

Remove after a good 10 mins, serve and relish the Tawa fry chicken.
