The Traditional Gajar Halwa recipe substituted with Sugar free and Low fat milk which becomes a healthy option for sweet consumption. The photographs did not come good but the dish did. π
Ingredients:
- Carrots β 1kg grated
- Low fat milk β 1 Litre
- Cow ghee β 100 gms
- Cardamom powder β 2 teaspn
- Saffron strands β 2 Pinch
- Almonds β 6 nos broken down
- Cashew β 6 nos broken down
- Sugarfree Sweetner β 30 gms approx.
Method:
Grate the entire 1 Kg Gajar.
Heat a Pan/Kadhai on stove.
Add 100 gms ghee in the Kadhai (Deep frying Pan) and keep on Low flame.
Add 1 kg grated Carrot. Stir well for 5 mins on High flame first and then on low flame and ensure that the carrot gets cooked in the Ghee. The Carrot will shrink and reduce to half.
Add Β low fat milk 1 litre, and stir and cook on 15-20 mins till the Milk reduces giving it the thick halwa like consistency.
Add cardamom powder (also optionally one can add nutmeg powder) and Saffron(dipped in milk for 5 mins) and stir on a high flame for another 5 mins.
Garnish with crushed Almonds and Cashews (also optionally you can add Β Sultana raisin and charoli/chironji/cudappah almonds to Garnish)
Close off the stove and add Sugarfree Sweetner powder about 30 gms (2.5 Tbsp) The reason to do this is to keep the sweetness of the Sugarfree Sweetner intact and keep the Gajar ka halwa balanced in its sweetness. I am sure you all will like it.
