This came in from my late mother in law many years back and so the further twist of a twist happened. We all know how a regular khandvi is made by taking 1 cup Besan and 2 cup sour butter milk and mixing it well. Add little turmeric and salt and cook well on a low flame. Once it gets thick without lumps it is ready. Spread it flat on a steel plate roll it. Thats how a normal Khandvi is made with a tadka of mustard seeds on top of it.
The Twist comes when we make a paste (chutney) of Fresh coconut, some ginger, few garlic pods, one or two green chili, pinch of salt, 1/2 Tbsp sugar, dash of lemon and little bit of cumin seeds. Once the cooked besan is spread on the steel plate, apply a thin layer of this chutney on the besan before rolling and cutting it.
Sprinkle some coriander leaves on top as garnish along with a regular tadka of only well spluttered mustard seeds. Done. The evening snacks are ready before your guests/Husband/Kids walk in..Serve with a smile.. 🙂

Actually you helped to recollect this dish, I ate in Baroda when I was there. People kept pushing me to Khaman and I was telling them it wasn’t. Thanks for helping me get to it. Absolutely yummy! By the way, do you know the other one which has leaves in it and is given as a concentric circle? I loved that too and Guj chutneys are amazing. Keep writing and trust me, I will try this for sure. Sounds simple :-/ but not sure if it is really.

The other dish is called Patra or the Aluwadi or Steamed Colacasia/Taro leaf rolls. That is a bit tedious compared to this one..
