Take 8-10 baby brinjals and cut into small pieces, soak them in water with little Salt and Turmeric. Keep them for 30 mins.
Heat oil in pan, add Cumin, Mustard seeds, curry leaves and let them crackle. Add a paste of Ginger, Garlic and Green chilly and saute.
Add the brinjals pieces, mix well and saute. Add Turmeric, Chilly powder, Goda masala and Garam masala, saute for a few minutes. Add desiccated coconut and sprinkle crushed fried onions. Mix and add Salt with half tsp sugar and 3/4th cup Dahi (plain yogurt) Simmer on low flame with closed lid and cook till brinjals are soft.
Keep checking for the colour and consistency of the brinjal so that they are not overcooked.
Garnish with fresh coriander and Serve hot with Roti, chapati or bread..
Garnish with chopped coriander,crushed groundnuts and serve hot.

What is Goda Masala?
Nimi, Goda Masala comprises mainly coriander, cumin, fennel seeds,Til, stone flower, cassia leaf, clove leaf, black pepper, caraway, star anise, clove, Big Cardamom, Nutmeg, green cardamom, asafoetida and groundnut oil and this masala is available in the market. Badshaah and Bedekar brands may be available in your area. This has got a different sweeter aroma because of the fennel seeds but the same kind of spicier effect on food like garam Masala.
I love baigan… may be I should try this out now that I HAVE to cook :p
