Puran Poli
Soak chana dal in 1000 ml water , add Turmeric and 1 tablespoon oil.
Cook for 5 whistles in a cooker and remove.
Drain water and store it in a separate bowl. We will use this for the curry.
In a pre heated pan, add jaggery and chana dal till it blends well.
Add nutmeg and cinnamon powder to it.
Cook till it gels well while stirring for 5 mins.
Allow it to cool and put it in a mixie and make a fine thick paste. Keep aside.
This is called the Puran. keep 2 tablespoon of the puran aside for mixing in the Curry.
Mix the flour with oil and mould a large dough ball.
Put oil on the dough ball and allow to sink for about 10 mins.
Make smaller balls of the same for making medium sized Chapati (Poli)
Roll the small Poli ball over a mould of Puran. Then make a chapatti(poli) out of it.
Ensure that you make the chapatti softly like you do while making a Paratha.
Cook on a tawa till the desired color you need is achieved.
The Puran Poli is ready. Apply a lot of ghee on one side and fold.
Kataachi Aamti (curry)
For the curry, Put a pan on medium flame and add coconut, dalchini, lawang and jeera.
Roast well and ensure they mix well.
Allow to cool and make a paste in a grinder of the same. Keep aside
The drained water from the Chana dal and the above paste is to be mixed.
Add tamarind pulp to it. mix well.
Put it on a stove for 5 minutes and bring it to boil. let it simmer on a low flame for a few minutes
Take oil in a large spoon and pre heat.
Add oil, mustard seeds, turmeric, curry leaves, salt to taste and asafoetida.
Let all splutter well. Mix the spluttering chaunk to the Pot of curry.
Add some 2 teaspoon puran paste to the curry for better taste and some thickness in the gravy.
Serve hot along with hot Puran Poli’s.
