Β The Idea of making Biryani itself is exciting and its more like making love. When you add and blend all the food ingredients in an established style it is like the foreplay which gets you ready for the ultimate experience. Once the final product is ready and consumed its like reaching the climax of your experience and savoring the moments with closed eyes. I am sure many of you have experienced the pleasure of eating a well cooked tasty Biryani with closed eyes allowing just your taste buds to do the work along with your moving jaws in a controlled fashion, increasing or decreasing the speed…of chewing of course. Now imagine some changes and twists in the traditional way of making Biryani. There are no hard and fast rules to it and one can change the foreplay (ingredients) and the style of foreplay (process of cooking) according to their wishes as long as at the end of the day with the final product (The Biryani) ready and while eating it you have the same closed eyes with the taste buds doing the job and one savors the moments and memories.
So here is what I thought, for making this one different with a twist. I am sure this recipe will make you all drool and fall in love once again. Come, lets fall in love…
Ingredients:
Raw Jackfruit : 500 gms
Rice : 500 Gms
Onions 6-7 (thin sliced)
Potato: 1 (thin sliced)
Meat Masala : 4 Tbsp
Garam Masala powder : 2 Tbsp
Mustard seeds: 1 tsp
Turmeric powder: 1 pinch
Garam Masala full : As per need
Sugar: 1 Tsp for caramelising onions and Rice color.
Cashew nuts: As per need.
Salt : As per taste
Oil: As per need (generous)
Ginger : 1 Thumb long
Garlic: 10-12 cloves
Coriander leaves : 1 cup
Green chili: 2-3
Method:
Heat Some water and once it is boiled shut the stove off. Add chopped Jackfruit to it and cover the lid. Remove after 30 mins and drain the water. Make a fine paste of Ginger, garlic, coriander and Green chili. Marinate the boiled Jackfruit pieces and keep overnight in the refrigerator or for 8 hours. ( I skipped the marination today as I wanted to add a further twist to it, but you can do the marination for ultimate results)
Heat oil in a pan and add mustard seeds and a pinch of turmeric. Once the seeds splutter, add sliced onions and salt. Dont let them get pink and add boiled jackfruit. Add Garam masala powder and Meat masala and stir well.
Add potato slices and cover the pan. Add some water on the lid and let it cook on the steam generated.
Dont add any water to the preparation inside. Cook for 5-10 mins and remove from flame.
Keep a vessel on the gas stove and heat oil. Add full garam masala with the leaves intact and stir for a minute.Β Add 2 sliced onions and sugar so that it caramelizes the whole rice.
Add the presoaked rice and stir for a minute.
Add water slightly more than twice the weight of the rice and cook it without covering. When the rice is done about 3/4th, shut the stove and layer the biryani with rice at top and bottom and the cooked jackfruit spread in the middle.
Cover it tight with a lid and cook till done. Garnish with fried onion and cashewnut. Serve hot piping jackfruit Biryani with Kachumber (salad consisting fine chopped onion, green chili, cumin powder and salt) Sit back and let the Biryani do the magic in your mouth. I am sure you will close your eyes and have Veg dish me non-veg ka mazaa… π

No Sujata, The meat masala actually overrides the little flavor a raw jackfruit has and makes it a welcome dish for vegetarians who are keen on trying a non-veg dish without eating non-veg.. π
I am not a jackfruit person per say, but this looks nice π
π Shweta.. Raw Jackfruit is often used as a vegetable in many parts of India and it also reduces Insulin dependency for Diabetics.

Yes Somali.. and if the Raw Jackfruit has come out real soft after cooking, then it tastes much better than Mutton Biryani.. π
Liked the concept..quite innovative. Hilsa biryani is a delicacy of the prestigious chain of restaurants “Oh! Calcutta” ( they have a branch in Mumbai ) but, this one looks innovative…will try it… π
