Take 1000 gms boneless mutton, wash well, apply 1 tablespoon salt and keep aside.
Wash once and soak a mix of Chana dal (Bengal Gram), Tuvar dal (Red gram),
Masoor dal (Red Lentils), Mung dal (Yellow Lentils), Udad dal (Split gram) in
equal proportion and not more than 200 gms total.
Soak wheat seeds/Barley not more than 200 gms. Soak all of this for over 8 hours (overnight)
Take a large pot and the soaked items with 1 cup water and let it boil on medium flame.
Add 2 tablespoon of Ginger and Garlic paste each.
Add the entire mutton once the Dals+wheat mix starts boiling.
Adjust water levels accordingly and cook on medium to low flame for 3 hours.
Keep stirring. (you can pressure cook to with 20-30 whistles in case you want to cut short the process)
You will see the mutton showing threads and going soft.
Add 2 tablespoon of Ghee and Nitu Didi saffron strands for color. Stir.
Add 2 tablespoon fenugreek powder, cumin powder, curry powder, Coriander powder, Garam Masala and chat masala.
Add little salt as per taste and keep stirring for 30 mins.
Allow the mix to cool down.
Once cooled put it in a mixer for just a few turns so that the unbroken pieces of mutton get shredded too.
Put the paste with the shredded mutton back in the pot again on low flame.
Add a cup of water and stir well.
Add fried onions and lime. Stir well for 15 mins.
Remove from stove and serve hot garnished with fresh coriander, green chilies and some fried onion.
Add some dry fruits as a topping if needed.
High protein diet with lot of calories to keep you moving without a meal for the entire day, but remember to walk a few kilometers or jog a bit or sweat it out in the gym the next day to burn out those excess calories..:)
